These are the 4 flavors of cupcakes I made to take to my family Easter. I maybe went a little overboard, but what the heck! That is what family get togethers are all about, right?? I made carrot cake (at my husband and little sister's requests). It is topped with cream cheese icing and dusted with nutmeg. I made sugared pecans for decoration. I also made tiramisu cupcakes. They are a very light vanilla bean cake that gets soaked with a sugar, coffee and marsala mixture. After a few hours, they get topped with a mascarpone whipped cream and dusted with cocoa powder. Third I made my basic vanilla bean cake with vanilla bean buttercream. I made "flowers" out of dehydrated pineapple. Lastly, S'MORES!!! They are a dark chocolate fudge cake dipped in chocolate ganache. They are topped with marshmallow frosting and that gets torched to toast the marshmallow. Stick in a graham cracker and you are set!!
